Update (05/01/2018): Samsung is now rolling out the Android Oreo update to the Samsung Galaxy S7 and S7 Edge in the UK. The rollout was spotted on Reddit and has been confirmed by multiple users, both for unlocked and carrier-branded handsets (specifically, Vodafone UK).
The update weighs in at around 1250MB and features build number R16NW.G930FXXU2ERD5. It introduces the Samsung Experience 9.0 UI to the devices, along with expected Oreo features such as improved notifications, adaptive icons, and picture-in-picture mode.

We reported only yesterday on Samsung's pledge to roll out the update by mid-May, so this recent news comes as a pleasant surprise. It's also a positive sign for other regions in Europe and North America, as the S7 Oreo floodgates are now open and broader deployment shouldn't be far behind.

Samsung Galaxy S7 and S7 Edge Android Oreo update
The S7 and S7 Edge have been up and running with Android Nougat since earlier this year, and now attention is turning towards Android 8.0 Oreo. Both the S7 and S7 Edge should be due to receive the update to Oreo, as they began life with Android Marshmallow, but there are no guarantees right now — Samsung hasn't confirmed which devices will receive it. The Nougat rollout to the Galaxy S6 and S6 Edge could give us some clues as to when Oreo on the S7 might appear, however.
Nougat landed on the Galaxy S6 and S6 Edge between March and June of this year, depending on the carrier and location, following Nougat's appearance the previous August. With the final Oreo build popping up in August of this year, our best guess right now would be to see it appear on the S7 and S7 Edge starting March 2018.

- February 18, 2017, AT&T began the Nougat update roll out for the S7 and S7 Edge.
